cinnamon-sugar popovers


For the shell:

2 tablespoons butter, melted & cooled
3 large eggs, at room temperature
1 cup (250 ml) whole milk, at room temperature
3/4 teaspoon salt
1 1/2 teaspoons sugar
1 cup (140 g) flour

For the sugar coating:

2/3 cup (130 g) sugar
1 teaspoon ground cinnamon
2 tablespoons melted butter

Softened butter, for greasing the pan

1. Preheat oven to 400ºF. Grease muffin pan with softened butter. (Try pre-heating pan for more puff  (before greasing))

2. Beat the 2 tablespoons melted butter, eggs, milk, salt and sugar.

3. Add the flour and beat til smooth. DO NOT OVERBEAT.

4. Divide the batter among the 12 greased muffin pans.

5. Bake for 30 minutes on bottom shelf, or until the puffs are deep brown. DO NOT OPEN THE OVEN WHILE BAKING

6. Mix the sugar and cinnamon together. Brush each popover all over with melted butter, then cover each puff in the sugar and cinnamon mixture.

Note: If using a blender, consistency of batter will be thinner .:. Add more flour. Consistency of batter should be of medium thickness. Still drips, but not like a liquid.
